Title: Green Tomato Pickles 2

2qtGreen tomatoes, sliced
3tbSalt
2cVinegar
2/3cDark brown sugar
3cOnions, sliced
1 Hot green pepper, chopped
1cWhite sugar
3tbMustard seeds
1/2tsCelery seeds
1tsTurmeric
2lgSweet red peppers, chopped

Mix tomatoes and salt. Let stand about 12 hours; drain. Heat vinegar, sugars and spices to a boil. Add sliced onions and boil gently for 5 minutes. Add the drained tomatoes and pepper. Bring slowly to a boil. Simmer 5 minutes, stirring occasionally with a wooden spoon. Pack in hot sterlized jars. Be sure the syrup covers vegetables. Seal at once. Process in boiling water at 212 degrees for 5 minutes. Randy Rigg
